Universal Services Development holdings pleased to announce Ashagrie Zewdu, PhD as our first Managing Director of Universal Food Consulting Services.
Dr. Ashagrie is an associate professor of food science and nutrition. He has a bachelor degree in Chemistry from Bahir Dar University and M.Sc. / PhD in Food Science and Nutrition from Addis Ababa University. He has more than 15 years’ experience in the areas of food processing, food chemistry, sensory evaluation, food microbiology, new product development and nutrition.
Dr. Ashagrie is a highly experienced, successful, and well-regarded a leader in a food Industry. He is one of the leading food expert in Ethiopia who is revolutionizing the Ethiopian indigenous food to become a global phenomenon. His 1st research work at the Center for Food Science and Nutrition of Addis Ababa University for his Masters degree, has a breakthrough findings by preserving injera for more than 10 days without fungal spoilage. His research work helped many Ethiopian injera manufactures to increase their local and export injera volume significantly. Also his has done his PhD research at Addis Ababa University and Pennsylvania State University (USA) in identification of nutritional and health benefiting compounds from edible mushrooms. Dr. Ashagrie Zewdu has more than 40 scientifically reviewed publications and he is also one of the renowned expert in the area of food safety and quality especially in aflatoxins, foodborne pathogens detection and mitigation.
The combination of his experience, work culture and drive makes him an ideal fit for Universal Food Consulting Services for the next stages of growth. Dr. Ashagrie’s decisional-making skill is really impressive. He is a good learner also and has an international project leadership qualities that was demonstrated by his leading role of a 4 years project with a 1 million dollars grant project titled “Ensuring the safety and quality of milk and dairy products across the dairy value chain in Ethiopia (Ensure).
